Richard Merl A. Aguila: The Civil Engineer Turned Chef of Max’s Restaurant

While there are many people who work for this company, one chef stands out because he is a qualified civil engineer. Know his story!


Max’s Restaurant is a famous Filipino restaurant, famous for its fried chicken. Known to be the “house that fried chicken built”, people often go to this restaurant for their Filipino dishes and because of its growing popularity, the company has expanded in other countries as well. Aside from having over 127 branches in the country, it has branches in the United States, UAE and Australia.

While there are many people who work for this company, one chef stands out because he is a qualified civil engineer. Richard Merl A. Aguila graduated from the Technological Institute of the Philippines with a degree of BS Civil Engineering. Despite his course being far from culinary, he decided to change his career path. His parents’ didn’t mind because they also worked for Max’s Restaurant before.

Chef Richard shares that he loves cooking and he adds science to what he does.

Over the years of being a chef, It is not surprising that he already won several awards in his food career and one of them includes an award for food safety. But the awards weren’t the thing that made him happy. He was actually elated when his food was loved by one of the finickiest critics of Richard’s life, his six year old daughter.

He was recruited in Max as part of the management team and this is when he fell in love with his job and cooking. And that’s when he did a course in cooking. Max’s Restaurant eventually set its foothold in UAE and Richard was brought in there to maintain the high quality of its food in the restaurant.

Richard’s parents had been extremely supportive of him joining Max. After all they too worked for the restaurant. He knows that if he continues being a chef, he has to miss out on many aspects of life but that doesn’t bother him at all. He is always too pleased to make his customers happy. He improvises his dishes with all of his creativity and innovation.

The best part about being a chef is that a food industry never goes into loss, it is always booming and there is always opportunity for the development of the Chefs. At present Richard Manages the kitchen operations of Max’s throughout UAE and is also the Brand Chef of Max.
